HOLIDAY APPLESAUCE CAKE
2 cups applesauce
1/4 cup cooking oil
2 egg whites
3/4 cup silken tofu, drained and mashed
1 3/4 cups granulated sugar
1 3/4 cups unbleached all-purpose flour
2/3 cup soy flour, sifted
1½ teaspoons baking soda
1½ teaspoons salt
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/4 teaspoon baking powder
1 cup raisins
1/2 cup chopped walnuts (optional)
In large mixing bowl, beat together applesauce, oil, egg whites, and tofu 1 to 2 minutes. Mixture will be lumpy. In separate small bowl, combine sugar, all purpose flour, soy flour, baking soda, salt, cinnamon, cloves, allspice, nutmeg, and baking powder. Add to wet ingredients. Mix well. Fold in raisins and walnuts.
Preheat oven to 350°F. Spray two 9 inch cake pans with nonstick cooking spray. Divide batter between prepared cake pans. Bake 30 to 35 minutes. Let cool in pans. Ice with your favorite cream cheese or vanilla cream frosting or serve plain. Yield: 16 servings
